This delicious recipe is so flexible you'll love making it!

Preparation time: 10 minutes
Cooking time: Around 20 minutes
Serves: 3-4 people

Ingredients

  • 200g Egg Noodles
  • 4 Skinless Chicken Breast Fillets, cut into strips
  • 4 Tbsp Light Soy Sauce
  • 2 Tsp Chinese Rice Wine or Dry Sherry
  • 5 Tsp Groundnut Oil
  • 2 Garlic Cloves, peeled and finely chopped
  • 50g Garden Peas
  • 25g Smoked Back Bacon, cut into strips
  • Half Tsp Sugar
  • 4 Spring Onions, peeled and finely chopped
  • 2 Tsp Sesame Oil

Method

  1. Slice the chicken breasts into strips, we liked ours quite chunky. Then mix the strips with 2 tbsp of the light soy sauce and Chinese rice wine, then leave to marinate in the fridge for 10 minutes.

  2. Cook the egg noodles according to the packet directions. Drain and refresh under cold water, then drain again and put to one side for later.

  3. Heat a wok or frying pan, add 2 teaspoons of the groundnut oil and then when hot, stir fry the chicken strips for about 5 minutes, this cooking time depends on how thick you have sliced your chicken. If your strips are much thinner then they will only need around 2 minutes of stir frying. Then transfer the chicken to a plate.

  4. Take the wok off the heat, wipe it clean. 

  5. Add the remaining groundnut oil and then add the garlic, fry for a few seconds to flavour the wok.

  6. Add the peas and the bacon and stir fry for a further 2 minutes.

  7. Add the drained noodles, the remaining 2 tbsp of light soy sauce, sugar and spring onions.

  8. Stir Fry these ingredients together for a further 2 minutes.

  9. Now add your reserved chicken and continue to fry for a further 5 minutes or until the chicken is cooked through.

  10. Add the sesame oil and mix together and that’s it, you can serve this dish either hot or cold.

Here are Lewis’s Cooking Tips!

  • If you like you can add King Prawns instead of chicken and instead of light soy sauce, a tasty alternative with prawns is Oyster Sauce!
  • If you want to, you can also add mangetout peas instead of garden peas, or thinly sliced broccoli.
  • You can add sliced baby corn or bamboo shoots to your recipe.
  • You could garnish the meal with toasted sesame seeds.
  • For a vegetarian option take out the chicken and bacon and add more vegetables e.g. shredded cabbage, onions, edamame beans.
